Ingredients:
1 pound ground beef
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 packet taco seasoning
1 can (10 ounces) Rotel, undrained
1/2 cup tomato sauce
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack or Mexican blend cheese
8 taco shells
2 tablespoons chopped green onions or cilantro
Instructions:
Heat olive oil in a large skillet over medium heat. Add ground beef and onion, then cook for 6 to 8 minutes until the beef is browned and the onion is softened. Drain excess grease if needed.
Stir in garlic and taco seasoning, then cook for 30 seconds until fragrant.
Add the Rotel and tomato sauce. Stir well and simmer for 3 to 4 minutes until slightly thickened.
Sprinkle in the cheddar cheese and Monterey Jack, then stir until melted and creamy, about 1 to 2 minutes.
Warm the taco shells according to package directions, about 3 to 5 minutes.
Spoon the cheesy beef mixture into the taco shells and top with chopped green onions or cilantro. Serve hot with sour cream, salsa, or extra cheese if desired. Store leftover beef filling in the fridge for up to 3 days.
